Lettuce Do Lunch: Administrative Prospective


Previously the City of Clarksburg featured Lettuce Do Lunch,a program developed at Robert C. Byrd High School. Lettuce Do Lunch falls under the state mandated work place experience because it is a simulated business that allows students who are enrolled in Career Technical Education (CTE) classes to gain work experience.

RCB’s Principal, Steve Gibson, the programs originator, explained, “It was a good idea that utilizes all CTE in a collaborative effort. It started with the business and accounting classes and has begun to include the foods and nutrition classes, and it will soon include agricultural classes, which will grow the lettuce, tomatoes, strawberries and herbs for salads they use in the lunch program. The program will eventually begin including the video journalism classes, which will handle the programs marketing”.

The Lettuce Do Lunch program gives students the opportunity to interact with their superiors, and allows them to have a better sense of community in the school. “Students are interacting with our staff, and we hope to someday provide lunch for the county office employees and our feeder schools. We have lots of ideas for the program”, stated Gibson.

Principal Gibson, recently took time out of his schedule to participate in the Lettuce Do Lunch program; by baking his famous “monster cookies” with the program’s participants. He provided the recipe for the students to use and took part preparing the dessert. “The greatest part of the job is working with the student, and it’s what I miss the most about being in the classroom. Lettuce Do Lunch is just another opportunity to interact with the students”, stated Gibson.

Students utilize the school’s Home Economics’ kitchens and supplies, and the preparation of the meals is supervised by foods teacher Leanna Pettrey, who donates a portion of her planning period to participate in the program.  “It’s really fun to work with the students hands-on rather than in a classroom setting. You see a different side of the students and it’s a great bonding experience for all of us”, said Pettrey.
